    I’ve been making a lot of dried beans this lockdown. Kabuli chana, rajma, lobia, you name it, I’m making it. They’re what I’ve been reaching for when fresh produce has been irregular.     Do you like beets? Because I do. They’re versatile. They’re sweet. They’re earthy. And you can let them wallow in your crisper, forget about them, pick them up a week later and still make them work.
